Its been a while since I recorded any cheeses here. Here's a mild hard cows milk cheese, given a boost by the layer of sage through the middle and on top. Originally from the seventeenth century, and made for eating at Christmas, it was immortalised in the Monty Python Cheese Shop sketch. It was a nice change, and definitely one I'd get again.

This one was made by Fowlers: www.traditionalcheeses.co.uk/cheese_selection.htm but bought from Waitrose.
